Seijas Coco Roll
Cake:
3 eggs
1 egg white
3/4 cup sugar
2 tbsp cocoa
1 1/2 tsp baking powder
4 tbsp cornstarch
Filling:
4 tbsp butter, softened
2 cups powdered sugar
1-2 egg yolks
2 tsp vanilla
Preheat oven to 375. Line cookie sheet with foil. Grease generously with butter.
Whip eggs and sugar for 10 minutes at high speed. Mix dry ingredients together.
Add to egg and sugar mixture. Pour into pan. Bake 10 minutes in 375 oven. Sprinkle
dish towel generously with powdered sugar. Turn cake onto dish towel and remove foil.
Dampen another dish towel and lay on top of cake to keep moist.
Cream butter, sugar and vanilla for filling. Mix egg yolks into creamed mixture.
Spread on cake and roll (like a jelly roll), dust with powdered sugar.
